Ok, so I am finally getting back to the Red Velvet Cake. It was my first adventure in cake baking. The recipe was actually from the internet - I just googled "red velvet gluten free". This recipe was easy and turned out amazing! Jim rated it a 10. Yeah! I took the left overs to work and of course they were gone. I did find it interesting working with the gluten free flours as I mix the batter. It is thick and creeps up the mixer. I am not sure how to prevent this from happening because it can be messy. It happened again when I made my Easter cake. It isn't to big of a deal, but I do have to stop periodically and scrap it back down the beaters. The cake was so moist. I am thinking it is time to invest in a kitchen-aide mixer that does the work. I want to really try recipes out as summer approaches. Happy Cooking friends!
